Prep Time: 5 minutes
Cook Time: 20 minutes
Total Time: 25 minutes
- 2 sheets puff pastry
- 3/4 cup vanilla pastry cream
- 1 1/3 cup fresh raspberries
- 1/2 cup sliced, toasted almonds
- 4 baking sheets
Preheat an oven to 400F. Roll each sheet of the pastry into a 15-inch by 10-inch rectangle or circles on a lightly greased baking sheet and prick the surface of the pastry to keep it from rising. Place the remaining baking sheets over the surfaces of the pricked pastry sheets to weigh down the pastry. Bake the covered pastry for 16 to 20 minutes, until the pastry is golden brown.
Cut each pastry sheet into 8 rectangles. Divide the pastry cream among the rectangles or circles. Arrange the raspberries and sliced almonds on the pastry cream-side of half of the rectangles or circles. Place the remaining pastry rectangles or circles, cream-side down, onto the raspberries and almonds. Garnish the tops of the napoleons with additional raspberries, almonds, and whipped cream.
