4 1/2 cups water

5 1/2 cups black currants

6 cups sugar


– crush berries

– combine with water, bring to boil

– boil for 15 minutes

– add sugar, bring to boil stirring constantly, about 12 minutes

– remove from heat

– stir, skim and seal in sterilized jars

Note: Sugar can be adjusted to taste due to high pectin content of berries
